One of the cheeses I missed most from Europe (did you know it’s from Cyprus originally?), I decided to get some Haloumi yday for dinner but only those from Australia can be found. Typically the feta here in Singapore is from Australia too. I do prefer the Greek cheeses somehow. |

Cooking de Janicita 🥗 Cauliflower Tomato “Tau Pok” Curry TOPPED with toasted cashews+fresh basil

So today I decided to play with spices using what we have left in the fridge and make a curry stew as a Surprise to Chef @lukey.christian . | So I first stir-fried in virgin coconut oil, ginger+fresh red chilli+garlic+coriander seeds+mustard seeds+cumin powder+curry powder+turmeric powder+black pepper. Then I added the coconut cream+ diy tomato purée (from the ripen tomatoes)+water+lemon juice+coconut vinegar | Lastly add the cauliflower+sliced tomatoes+lemon peels+”Tau Pok” (Dried beancurd puff) to simmer in the curry. Drizzle more coconut oil onto the cauliflower and cover the pan. | Final touches – toasted cashews+ homegrown fresh basil | Voila – there you have a hearty flavourful curry that’s still light and aromatic ! Can be eaten with any grains – I chose to pair it with a nutty red bulgur wheat

Stew with Sautéed snow peas TOPPED with sunflower seeds+cilantro+fresh red chilli |
So I made the stew with soya sauce+sesame oil+coconut vinegar+goji berries+black pepper+spring onions. Used also the water of the dried black fungus to add to the mushroom water. | Sautéed the snow peas separately with ginger+garlic+spring onion |
I really like this dish which is hearty yet light since it’s made with brown rice vermicelli! |~

So I was soaking green beans overnight when I received a surprise – the beans sprouted ! Had sprouted buckwheat before but had no idea that green and red beans can be too! So I decided to do 3 things with the sprouted green beans. One of them is to have them raw in a salad |
I mixed the sprouts with spring onion and added olive oil+balsamic vinegar+pepper+salt. | A simple super healthy crunchy salad ! |~

So I passed by a traditional medicinal shop in @chinatownsingapore the other day and was inspired to make a Chinese dish using dried ingredients | I used ginger+garlic+green peppers+red chilli+dried shiitake Mushrooms+enoki mushrooms+dried black fungus+dried beancurd skin+goji berries
For the sauce seasoning, I used soya sauce+olive oil+sesame oil+coconut vinegar+rice wine +black pepper. Also I used the mushroom water of the dried shiitake mushrooms |

All the ingredients took the spicy sweet and savoury flavours of the sauce! Eat with rice or egg noodles, seasoned only in sesame oil+the sauce of the stew Birthday Boy @lukey.christian I hope you enjoyed my first attempt at making this Chinese dish. And yes the champagne went very well with it. |~

Cooking de Janicita 🥗 Red Miso Fried Rice TOPPED with cilantro+toasted cashew nuts

So specially for @lukey.christian since it’s his birthday, I made a fried rice using pork and there was some leftover in the fridge too.

Decided on using readymade japanese red miso paste and added garlic+Kenya beans+spring onion+white cabbage+black pepper+pink salt | What a yummy fried rice japanese style!

And no soya sauce and sesame oil were used.

Cooking de Janicita 🥗 Stir fry Organic Udon with oyster mushrooms

For the base sauce, I used ginger+garlic+soya sauce+sesame oil+black pepper+coconut vinegar+Taiwanese rice wine | Special mention of the sesame oil from a Singapore brand that’s been around since 1950s @nanyangsauce – the taste is so pure and rich that it enhanced the flavour of the dish like no other sesame oil I’ve tried so far. Their 12 months aged soya sauce is another amazing condiment which I would love to try cooking with next! |~
