Pickled Red Cabbage “Janicita” Fusion Edition | So I decided to make some homemade pickles as a birthday gift for one of my longest known buddies @garieongz | In this version, I used coconut vinegar+coconut sugar+maple syrup+salt+black pepper+basil+fresh red chilli( without seeds)+garlic cloves and boiled the mixture for 5 min. Then I added the mixture to the thinly shredded red cabbage and leave it to cool before bottling it. | I called it “Janicita” edition because of a fusion of Asian and Italian touches of toasted black sesame and basil respectively! Love the “Fusion Explosion” of flavours! |~

Today I wanted something sweet, buttery and “ no egg “ – came up with a japanese inspired sweet curry. | First, sautéed garlic+shallots+basil with butter+coconut sugar+vinegar+coconut cream+mushroom water+red curry powder+Indian mustard curry spices premix+turmeric powder+black pepper+salt | Added asparagus+baby corn+baby carrots+shiitake mushrooms to simmer in curry sauce | Can be eaten with rice or pasta but I had craving for sourdough which worked well cos I wanted something like a “bread+curry” Indian/Chinese lite version |~

Thanks to dear @sherrylean who inspired me after meeting her yday to make soups and vegetable stock, I decided to make a chinese style soup which essentially is throwing all the ingredients in one pot –
Shitake mushrooms+carrots+
Spring onions+red onions+red chilli + dried red dates+goji berries+pea shoots+Tamari (wheat free soy sauce)+white pepper+sesame oil+coconut vinegar |
Add the soup to quinoa separately. Substitute the quinoa with any grain/noodle/rice. | A light yet hearty meal with the sweetness brought out by the dried red dates and goji which we often use in chinese cooking! |~
