Cooking de Janicita ? Okra Kailan Beancurd Coconut Curry served with cilantro brown rice + curried cashews +curry leaves+golden raisins

I cooked this dish for one of my fave persons @alina_hertslet sometime back when we had a girly catchup | The curry is made with curry powder+mustard seeds+coriander seeds+cayenne powder+turmeric powder+ginger+garlic+tomatoes+chillies+coconut milk
For this time, I added green leafy veggies “Kailan” which worked with the curry. For the rice, boil it with chopped cilantro ( I always use herbs that are not so fresh so as to waste not) to give it that nice touch of flavour to complement the curry. |
Defo would make this hearty combo again and perhaps make it spicier. ?

When in Switzerland, I decided to cook a very Chinese dish ie fried rice.
With ginger+garlic+pepper+soya sauce+sesame sauce+white rice+eggs, VOILA you have yourself a simple yet tasty crowd pleaser. | Tricks for a good fried rice – use overnight white rice for the right texture and crack the eggs and stir them in with the rice quickly under high heat. | Everyone from the Swiss to the Swedish enjoyed the dish! |

Cooking de Janicita ? Bhindi Masala – Okra/ Ladies Fingers in Onion+tomato Curry TOPPED with toasted cashews+raisins

So okra is one of my fave veggies and i decided to experiment cooking this dish. For Indian cooking you need some basics : mustard seeds+ cumin seeds+ coriander powder+turmeric powder+fresh ginger+garlic+chilli.

And pay attention to the order of the spices – mustard and cumin first ! | I was also inspired by an Afghan rice dish that makes use of raisins and nuts so decided to add them for enhanced flavours and textures. | As good as the ones I’ve had at Indian restaurants and even better cos of my Janicita touch ! Such a satisfying dish to go with rice .

One of the cheeses I missed most from Europe (did you know it’s from Cyprus originally?), I decided to get some Haloumi yday for dinner but only those from Australia can be found. Typically the feta here in Singapore is from Australia too. I do prefer the Greek cheeses somehow. |

Cooking de Janicita ? Cauliflower Tomato “Tau Pok” Curry TOPPED with toasted cashews+fresh basil

So today I decided to play with spices using what we have left in the fridge and make a curry stew as a Surprise to Chef @lukey.christian . | So I first stir-fried in virgin coconut oil, ginger+fresh red chilli+garlic+coriander seeds+mustard seeds+cumin powder+curry powder+turmeric powder+black pepper. Then I added the coconut cream+ diy tomato purée (from the ripen tomatoes)+water+lemon juice+coconut vinegar | Lastly add the cauliflower+sliced tomatoes+lemon peels+”Tau Pok” (Dried beancurd puff) to simmer in the curry. Drizzle more coconut oil onto the cauliflower and cover the pan. | Final touches – toasted cashews+ homegrown fresh basil | Voila – there you have a hearty flavourful curry that’s still light and aromatic ! Can be eaten with any grains – I chose to pair it with a nutty red bulgur wheat

So I made the stew with soya sauce+sesame oil+coconut vinegar+goji berries+black pepper+spring onions. Used also the water of the dried black fungus to add to the mushroom water. | Sautéed the snow peas separately with ginger+garlic+spring onion |

So I was soaking green beans overnight when I received a surprise – the beans sprouted ! Had sprouted buckwheat before but had no idea that green and red beans can be too! So I decided to do 3 things with the sprouted green beans. One of them is to have them raw in a salad |
I mixed the sprouts with spring onion and added olive oil+balsamic vinegar+pepper+salt. | A simple super healthy crunchy salad ! |~

So I passed by a traditional medicinal shop in @chinatownsingapore the other day and was inspired to make a Chinese dish using dried ingredients | I used ginger+garlic+green peppers+red chilli+dried shiitake Mushrooms+enoki mushrooms+dried black fungus+dried beancurd skin+goji berries
For the sauce seasoning, I used soya sauce+olive oil+sesame oil+coconut vinegar+rice wine +black pepper. Also I used the mushroom water of the dried shiitake mushrooms |

All the ingredients took the spicy sweet and savoury flavours of the sauce! Eat with rice or egg noodles, seasoned only in sesame oil+the sauce of the stew Birthday Boy @lukey.christian I hope you enjoyed my first attempt at making this Chinese dish. And yes the champagne went very well with it. |~
