Buckwheat Pancake with melted aged cheddar+smashed avocado+flaxseeds+cherry tomatoes+sunny side egg with a side of banana chips | So i havenāt been 100% well since my trips to India and Thailand – seems the Indian bug is very stubborn and the spicy food in Thailand didnāt help. So since coming back home to Singapore Iāve been trying to nurse myself back to health with homemade food. | First time doing buckwheat pancakes , like a version of the French galette but heavier somehow even though I used the traditional recipe of buckwheat flour+salt+egg+water and butter for frying | Versatile enough for sweet or savoury toppings! |~

So I recently learnt from Richard and Erica @zeng_erica about grated cauliflower mimicking texture of rice. | Today I decided to do a Chinese style fried āriceā using baby oyster mushrooms+Chinese celery+spring onion+garlic+soya sauce+sesame oil+goji berries+sesame seeds+sunflower seeds | Squeeze some orange juice on the cauliflower rice and kale – a lovely sweet savoury bitter pairing with the salad.
So in love with this Toscano kale which is grown organically in Singapore – so good that it is BEST eaten raw with lemon/orange juice! š

I cooked this dish for one of my fave persons @alina_hertslet sometime back when we had a girly catchup | The curry is made with curry powder+mustard seeds+coriander seeds+cayenne powder+turmeric powder+ginger+garlic+tomatoes+chillies+coconut milk
For this time, I added green leafy veggies āKailanā which worked with the curry. For the rice, boil it with chopped cilantro ( I always use herbs that are not so fresh so as to waste not) to give it that nice touch of flavour to complement the curry. |
Defo would make this hearty combo again and perhaps make it spicier. ?

So okra is one of my fave veggies and i decided to experiment cooking this dish. For Indian cooking you need some basics : mustard seeds+ cumin seeds+ coriander powder+turmeric powder+fresh ginger+garlic+chilli.
And pay attention to the order of the spices – mustard and cumin first ! | I was also inspired by an Afghan rice dish that makes use of raisins and nuts so decided to add them for enhanced flavours and textures. | As good as the ones Iāve had at Indian restaurants and even better cos of my Janicita touch ! Such a satisfying dish to go with rice .

So today I decided to play with spices using what we have left in the fridge and make a curry stew as a Surprise to Chef @lukey.christian . | So I first stir-fried in virgin coconut oil, ginger+fresh red chilli+garlic+coriander seeds+mustard seeds+cumin powder+curry powder+turmeric powder+black pepper. Then I added the coconut cream+ diy tomato purĆ©e (from the ripen tomatoes)+water+lemon juice+coconut vinegar | Lastly add the cauliflower+sliced tomatoes+lemon peels+āTau Pokā (Dried beancurd puff) to simmer in the curry. Drizzle more coconut oil onto the cauliflower and cover the pan. | Final touches – toasted cashews+ homegrown fresh basil | Voila – there you have a hearty flavourful curry thatās still light and aromatic ! Can be eaten with any grains – I chose to pair it with a nutty red bulgur wheat
