Mushroom vegetable soup with quinoa TOPPED with parsley+spring onion+flax seeds+sunflower seeds |
Thanks to dear @sherrylean who inspired me after meeting her yday to make soups and vegetable stock, I decided to make a chinese style soup which essentially is throwing all the ingredients in one pot –
Shitake mushrooms+carrots+
Spring onions+red onions+red chilli + dried red dates+goji berries+pea shoots+Tamari (wheat free soy sauce)+white pepper+sesame oil+coconut vinegar |
Add the soup to quinoa separately. Substitute the quinoa with any grain/noodle/rice. | A light yet hearty meal with the sweetness brought out by the dried red dates and goji which we often use in chinese cooking! |~
