Cooking de Janicita ? “The Golden Asian” Quinoa Salad

For this week, I decided on a “fresh and light” theme since I had over indulged during CNY. Inspired by the small golden oranges or “kumquat” gotten from my godson’s Granny, I decided to make a salad with it. The interesting thing about this type of orange is that the skin can be eaten too, tasting both tarty and bitter. | At the same time, my new fave organic urban farmer @w.w.edibles delivered to me this lovely bunch of local veggies and flowers today. | Finally, I decided to make a warm quinoa salad. First, I sautéed small oyster mushrooms with garlic+olive oil+salt+pepper+grape vinegar together with the quinoa. Then I made a salad out of mostly asian veggies – kumquat+
wingbean+watercress (both veggies usually eaten cooked in asian cooking but taste great raw too)+
carrots+red cherry tomatoes+white sesame+toasted sunflower seeds in a japanese sesame dressing | Add a dash of lemon juice to the whole dish and nuts if you wish. I added toasted cashews for a crunchier bite. | The entire dish had a great blend of flavours, colours and textures! |
