Cooking de Janicita ? Tofu+Tempeh Curry Rigatoni

So I was inspired to recreate a dish I had in #giliair recently for my friends in Singapore – a Thai-Indonesian curry made of tofu+tempeh(fermented soy beans). So I used red curry paste+coconut cream+pineapple+roasted peanuts+shallots+garlic+basil+organic coconut sugar. | I had it with rice the first time but I had leftover curry so I decided to add pasta to it and a bed of fresh lettuce and some toasted cashews. | My friends enjoyed the curry with rice. Though the pasta worked well too in this case! Just that I need to work on making this dish look as good as it taste the next time! |~.
