Mandarin Orange Salad |
So listening to my body, I wanted a tarty salad with some carbs so being inspired by CNY+Friend+my fresh edible plants, I made these 2 dishes. | For the salad, I used spinach for the greens, my home made papaya+passion fruit jam as dressing with olive oil+salt+pepper and added sunflower seeds | And the sautéed moringa flowers really tasted pretty good in the pasta. Overall a very balanced meal! |

“Coco-cado” Smoothie | Since I have been eating a lot during CNY, today I decided to make a smoothie, inspired by the edible flowers and leaves I bought yday. | Ingredients : avocado+coconut milk+figs+spinach(“Okinawa” purple/“Longevity”)+moringa leaves+blue pea flowers+turmeric powder+Chia seeds+sunflower seeds | Moringa I first discovered it as a powder together with maca in Mexico. I really like the leaves though which are high in vit c and antioxidants. Very versatile uses indeed ! | Finally I decided to garnish the smoothie with flowers yellow(“ixora”)+purple(“malabar gooseberry”) | Added a pinch of salt too which is “my thing”. I would try adding more sunflower seeds the next time too cos I really like the nutty taste. You can also play around the proportions according to your tastebuds! |~

Spaghetti in Pesto TOPPED with fresh spinach(purple  Okinawa+Longevity)+toasted sunflower seeds |
I had left over of basil and other greens from the lovely stash bought from organic urban farmer @w.w.edibles and was wondering what else I could make. In the end I decided on a pesto sauce which I’ve not made before. | Pesto is really simple and just need to blend everything together. In my recipe I used basil+moringa leaves+olive oil+almonds+sunflower seeds+parmesan+salt+pepper+lime juice(I had no lemon so used lime and it turned out alright!). Add some water +olive oil to adjust texture. |

Avocado Carbonara TOPPED with toasted walnuts+lemon zest+parmesan cheese | So I’ve been wanting to try this recipe since learning about it from my Italian Friend Filippo @scurtif in Bucharest. | Finally I had the blender to make the “carbonara” sauce – avocado+egg+olive oil+fresh garlic+lemon juice+salt+pepper | For this sauce suggest to include a herb like basil or rosemary.

It would taste better not overly creamy. Only attempt this dish if you are a big avocado fan and love creamy sauces. I probably would try in future with some fresh vegetable toppings.

King Oyster Mushroom and Zucchini Rigatoni cooked in butter TOPPED with toasted walnuts+fresh basil | Inspired by the buttered rigatoni I had at my gf’s house yesterday, I had a craving for it today. It’s my first time using butter to make a pasta dish and must say all the ingredients went very well together. The nuts lent a crunchy texture and the basil added a fresh touch to the butteriness of the dish. |

Hmmm on a side note, does anyone see a shape of a fruit like me? The layout of the dish was purely a coincidence! But really apt for the upcoming Lunar New Year next week! |.

Pan fried King Oyster Mushrooms “crowned” on a salad of red cabbage+young corn+yellow cherry tomatoes+fresh garlic+garlic pumpkin seeds+white sesame+almonds+fresh basil | First time cooking these mushrooms and must say they were so delicious being cooked only in butter+garlic+salt+pepper. The salad dressing I decided to give it an asian twist – coconut vinegar with ginger and chilli + olive oil+salt+pepper | Overall very satisfying and a great alternative to a standard salad! .
