Avocado Carbonara TOPPED with toasted walnuts+lemon zest+parmesan cheese | So Iā€™ve been wanting to try this recipe since learning about it from my Italian Friend Filippo @scurtif in Bucharest. | Finally I had the blender to make the ā€œcarbonaraā€ sauce – avocado+egg+olive oil+fresh garlic+lemon juice+salt+pepper | For this sauce suggest to include a herb like basil or rosemary.

It would taste better not overly creamy. Only attempt this dish if you are a big avocado fan and love creamy sauces. I probably would try in future with some fresh vegetable toppings.

King Oyster Mushroom and Zucchini Rigatoni cooked in butter TOPPED with toasted walnuts+fresh basil | Inspired by the buttered rigatoni I had at my gfā€™s house yesterday, I had a craving for it today. Itā€™s my first time using butter to make a pasta dish and must say all the ingredients went very well together. The nuts lent a crunchy texture and the basil added a fresh touch to the butteriness of the dish. |

Hmmm on a side note, does anyone see a shape of a fruit like me? The layout of the dish was purely a coincidence! But really apt for the upcoming Lunar New Year next week! |.

Pan fried King Oyster Mushrooms ā€œcrownedā€ on a salad of red cabbage+young corn+yellow cherry tomatoes+fresh garlic+garlic pumpkin seeds+white sesame+almonds+fresh basil | First time cooking these mushrooms and must say they were so delicious being cooked only in butter+garlic+salt+pepper. The salad dressing I decided to give it an asian twist – coconut vinegar with ginger and chilli + olive oil+salt+pepper | Overall very satisfying and a great alternative to a standard salad! .
